Mmm! This is definetely the best sticky-date cake I have ever made! Actually, it's the only sticky date cake I have ever made... anyway, just try it. You will be glad you did!Firstly start by chopping up 250g pitted dates.

Chop them however you want- finely chopped or roughly.

You will also need bicarb-soda, 125g butter, 3/4 cup brown sugar, vanilla extract, 2 eggs and self raising flour.

Place the chopped dates in a bowl and add 1 teaspoon bicarb-soda.

Pour over 1 1/2 cups boiling water

and allow to stand for about 20 mins.

Place butter in bowl and add brown sugar

and a teaspoon of vanilla. Beat until pale and creamy.

Add eggs one at a time and beat well.

Stir in the dates

and the flour.

Mix until well combined.

Pour into a greased and lined pan.

Bake for 40-45 mins in an 180 degree oven. Or, before you put it in the oven you can decorate the top with pecans or any other nuts. They add a nice crunch.

smooth surface and bake in a 160 degree oven for 1 hour. If you have a fan forced oven, reduce temperature by 20 degrees.


Plain flour, self-raising flour, custard powder, cornflour, salt, butter, sugar and an egg, seperated.


Until the mixture looks like fine bread crumbs.
Add in the sugar and mix well.
Make a well in the centre and add the egg yolks.
and mix it all together.
Knead the dough lightly, then refridgerate for 1 hour.

Roll out one half of the dough
until big enough to line your pie dish.
Scoop apple onto pie.
Roll out the other half of pastry. Brush the edges of the pie with a little milk and cover with pastry.
Trim the edges of the pie.
Decorate the pie with pastry scraps, if desired. Cut a slit in the top to let the steam escape and brush pie with lightly beaten egg white. Sprinkle with extra sugar. Bake in moderate oven about 40 mins or until pie is golden brown.

Serve with custard or ice cream. Whatever you prefer- it is your pie. But not this one. This one is mine!
