Banana Muffins

I had been wanting to make banana muffins for ages, so today I thought I would make some. They are kind of like a cupcake with the addition of cream cheese icing, but they still have a muffin-y texture. The full recipe is found here, but I changed it around a bit.

Ok first up we need to mash a banana.





You will also need butter, brown sugar, an egg, self-rasing flour, bi-carb soda and milk.


Sift 1 and 1/2 cups of flour into a bowl and add 1/2 teaspoon of bi-carb soda.


Set aside for now.


In a seperate bowl, beat butter until fluffy.




Add 1/2 cup of brown sugar and beat until well combined.




Add mashed banana and beat until combined.


Add the egg and mix.


Add a third of the flour and mix on low speed until just combined.


Add half the milk and mix on low speed.


I couldn't decide which pouring shot to use...



Repeat process, then add remaining third of flour.


Place teaspoonfuls of mixture into paper cases and bake in 180 degree oven for about 10 mins (I used mini cupcake cases). And yes, I did eat one straight out of the oven.


I also made 3 bigger cupcakes out of the leftover batter. As you can see, I over filled them and they spilled out over the sides. But thats ok, they still tasted good!


For the cream cheese icing you will need cream cheese (of course), icing sugar and grated lemon rind. I also added some lemon juice.


You'll only need 125g of the cream cheese.


Add some icing sugar to the cream cheese


and some grated lemon rind. Beat it about a bit.

Spread, pipe or um swirl your icing on the cupcakes.
