Date Crumble Slice

Mmm! Date crumble slice! It's like a crumble, but in a slice. And it's very rich but very yummy.
Here's what you'll need to make it:


2 cups chopped pitted dates, 1/3 cup sugar, 185g butter, 1 cup brown sugar, 1 1/3 cup of plain flour, 1/2 teaspoon bi-carb soda, 1 1/2 cups rolled oats.

First up, combine dates, 1 cup of water and sugar in a saucepan.





Cook, stirring for 10-15 mins or until dates have absorbed liquid.


This is what they should look like. Set them aside to cool.


Meanwhile, you can make the crumble. Cream butter and sugar together in electric mixer.






Sift flour and bi-carb soda over the creamed mixture.






Stir to combine. Add oats and mix together.

Press half the crumble mixture over the base of a greased and lined pan. I didn't get a picture of that because my camera kept going flat.
Then spread the date mixture over the top of the crumble base.


Gently press the remaining half of the crumble mixture on the top. Bake for 35-40 mins or until golden.

Mmm yummy! Some cream or ice cream would be good with this as it is quite rich.
